#teamnopants for Meal Prep Sunday


This was my motto for the day.  I’m not usually one for “lazy” days, but this morning had me feeling a little exhausted.  It was the perfect day to get some meal prepping complete.

For the last couple of weeks, I’ve been focusing more on preparing an array of meals for dinner//lunch.  This has helped me tremendously cut back on our grocery bill for the week. I spend a few minutes scrolling through Pinterest, looking for things that are healthy, will aide in the refueling of my body, long after I’ve abused it running or working out, and something I think I could get my husband to eat.

This week I found two recipes, both incorporating veggies & protein.

The first dish is paleo friendly, and gluten free.  The recipe is from a gal named Racheal, and her blog is called Meatified. I chose the dish, because I am obsessed with zucchini noodles ((ZOODLES)) && I love scallops.  It was fairly simple to make && reasonably priced too.

The finished product was not as photogenic as her final masterpiece, but I can only hope it tasted like hers.  I think next time I will use chicken instead of scallops.  Chicken has my heart.

The second dish came from a cute gal named Ali.  Her blog is called Gimme Some Oven. I chose this dish, because I love pesto && everything garlic.  This one was super simple to make, and came out beautifully.

The only thing I changed to this recipe was peeling the skin off of the chicken sausage.  Everything about it creeps me out; I can’t chew it, and it’s so weird.  ((insert disgusted face here))!

image14The final product was not a disappointment.  I will be making this again in the future. And extra kuddos, because my husband ate it, even though he left the brussels sprouts behind.

Preparing food in advance is so important to staying on track, and it really just makes the work week so much easier.  There also a huge sense of accomplishment when you finish prepping, and can relax knowing your body is going to be well nourished throughout the week.
